The Adamantoise has a truly ridiculous 60 defense that makes the one you find guarding the Goddess's Bell virtually immune to physical attacks. Fortunately, they have a weakness to Ice. Even later in the game, Blizzard is your best bet to pierce their defenses.

The Adamantoise has two main attacks, a physically-damaging stomp and a Quake spell. Both of these are Earth-elemental attacks, so your best bet to survive against them is to stock up on upgraded Clay, Siltstone, or Gaian Rings.

In order to defeat the Adamantoise, you will have to disable its legs. This can be done with standard Attacks, but performing any Summon will also immediately disable both legs. You can use this trick to give yourself a major advantage early in the fight, but it will be difficult to finish off the Adamantoise before it stands back up. All of the Adamantoise's resistances are lowered to Halved, its Chain Resistance drops to 30, and it becomes vulnerable to everything except Poison, Pain, and Fog when its legs have been disabled. Deprotect and Deshell are obviously important, but don't neglect Imperil to give your Ravagers a fair shot at dealing significant damage. Time is of the essence, because although the Adamantoise cannot attack while its legs are disabled, it will eventually stand back up.
