The Salamander is a powerful Fire-based foe. Ice Spells and the Freezing Blade are your best offense. The Salamander's Flame ability hits the whole party hard, and even with constant healing you may be quickly down to your Ice Armor-wearing Warrior. If so, use any resources at your disposal to achieve victory (the Bacchus's Cider you may have picked up in Tokkul is especially useful).
After the fight you will receive four new Jobs. The Knight is a straight-up replacement for the Warrior, but other three are situational fighters.
The Ranger is effective from the back row and can perform limited healing, though you'll only have access to one Cura Spell for the time being.
The Scholar is, contrary to what you might expect, basically a replacement for the Monk: a powerful front-line fighter with weak defense. If you take the time to collect both sets of books (from the Dwarven Hollow and Castle Argus), Scholars can positively annihilate anything with a basic elemental weakness.
The Thief is initially useful for his ability to pick locked doors for free. Steal isn't very good, and you won't see any good Thief equipment until you reach the full World Map later.
