Giving pence to Kings or dropping pence in water in town will result in gaining the same number of Hit Points (one and a half times the amount of pence, rounded down). All things being equal, you may as well Drop that money in water, since there's a small chance you'll get a random spell. It can even be a spell you can't normally buy (for non-Wizards). Note that you can get spells by dropping as little as a single copper penny into water.

You will also be given 500 HP by any Princess you rescue, and gain double the Experience earned in a dungeon as HP when you manage to climb back to the surface.

Giving Gold to Kings will get you the most Hit Points if your total is low. You can also drop Gold in the Lake in towns to gain Hit Points, which will result in the same overall gain once you have a total in the thousands. You will also be given 3,000 Hit Points by any Princess you rescue, and gain double the Experience earned in a dungeon as Hit Points when you manage to climb back to the surface.
